Real, real tough to pick just one, but I think I'll have to go with:
The Deed of Paksenarrion series by Elizabeth Moon. The first two books of the series are written quite well, and read just like a series of D&D adventures. Good stuff.

Honorable mention must go to the first trilogy in the Black Company series by Glen Cook, various books in the DragonLance saga, and to the incredible depth of the A Song of Ice & Fire series.

But really, who can just pick one?

Our preferences line up pretty well, although I loathe the Dragonlance novels. I'm rereading The Deed of Paksenarrion at the moment and basically swiped the dungeon outside Brewersbridge for my last C&C session.
