Kind of cheating, but I use them as a set, so, "Best of Dragon Volumes 2 to 5".

Well, since The Arcanum would qualify as "core rules" for itself, though I have only ever used it as a supplement, I will only give it honorable mentions...
So, beyond that, I would probably go with All the Worlds' Monsters Volume I - III.

Dammit man...this is too hard.
I love many of the examples already given - Toolbox and Ultimate Toolbox, Best of Dragons, many of the GFW books, Mentzer Expert set, just to name a few. I literally love just about every one lised so far...
But I have to agree with my esteemed colleague, DD...the 1983 World of Greyhawk boxed set.

I finally won 3 of the Flying Buffalo City books on eBay (2,3, and 4), so those may become new favorites if they are as cool as they look to be.

"Path of Tears" by GDW. Gritty 3 dimensional description of people and worlds, in a dark universe with plenty of conflict that somehow, at the same time manages to be all about hope and heroism.
Gave a fantastic, realistic feel to a setting that was custom built to be adventured in. Stands head and shoulders about every other sourcebook I ever bought. And I mean that in praise of this book, not a knock at any others.
D&D may be my favourite RPG ever, but GDW made the best sourcebook.

The Rolemaster supplement "Dark Space" by Monte Cook. It was a funky blend of Cthulu, Dark Fantasy, and Science Fiction. I've never seen anything else quite like it.

I'm not sure if it's a supplement per se, but Rappan Athuk Reloaded has provided tons of entertainment.
This is a really hard question. Some things I used quite a bit years ago, such as the 2e "Campaign Sourcebook and Catacomb Guide," but I haven't touched that in years. Meanwhile, for 3.5, I really enjoy the Magic Item Compendium and the Spell Compendium because they are so dang useful. I loved Combat & Tactics for what it did to 2e...
Ha... this is a tough one.
Man, what about the Wilderlands of High Fantasy by Necromancer Games?
I would say my most current favorite is Engineering Dungeons.

When i look back on my entire gaming career, I'd have to say the single supplement I had the most fun with was the AD&D 2nd edition Tome of Magic. I'm not so into it these days, but I have to give it it's due. That came out in the sweet spot of my early gaming days. The Complete Wizards Handbook would go right up there with it.
In my current era of gaming, I'd have to say the Wilderlands box set is my favorite.

Not sure about my favorite, perhaps I'll weigh in at another time. That said, nice to see somebody mention FASA Star Trek's Ship Construction Manual. Twas' a good book. Speaking of FASA, I have all of the old Doctor Who rules, supplements, and adventures on disc. And, my friend printed them, and put them in ringbinders. What a great friend. I intend to finish my DocWho Savage Worlds conversion someday.
