I second the Belgariad. I haven't gotten to the Malloreon yet (another Eddings saga, related to the Belgariad), but it's on the list.
Modesitt's Recluce saga is incredible as well.

It should be noted that Ian Cameron Esslemont also writes books of the Malazan Empire. And, not just obscure stories, but are canonical that mesh with Steven Erickson. He has 2 books out called Night of Knives and Return of the Crimson Guard with Stonewielder on its way.
Both Erikson and Esslemont are co-creators and a fun fact, Malzan was created for a world they used in a GURPS campaign.

Amazon shipped me the latest Malazan today! I love it when they ship pre-orders early.
I will be ordering the Esslemont books shortly too. They were out of print in the US for a while, but Erikson is increasingly popular here and they have reprinted them, and the Bauchelain/Korbal Broach stories.

What can I say? I like a book series with some substance and complexity. Not to mention, as fast as I read, I'd like something that takes me more than a couple hours to get through.

Geez, nobody mentioned the "Thieves World" series.
If you can get your hands on the first one -- I got it as a 3-in-1 volume years back when I belonged to a book club -- it's GOLD!
Robert Aspirin (the editor/writer) basically was at a fantasy/sci-fi
convention and, 'round the dinner table with other writers mentioned
the idea of a book where each writer does a story for it, yet all of
those stories are set in the same world. And they said, "Sounds cool,
you're it, once you set up the world basics, send that to us and
we'll each write you a story and you can put it all together.
Each writer could use other writers' characters in their stories and
the result is just very much (to me) like a game where multiple DMs
(CKs now) alternate running their games using the same world.
And, heck, they're all just marvelous stories! Check it out.
