When you produce new material, how do you ensure it meets the Open Game License?

Do you submit the stuff to WOTC?

Do you have a checklist of things to look for?

How do you cover the details prior to printing a product?

You read the OGL, and if you can't figure it out, you ask an attorney who specializes in copyright / trademark law. Forums are not the place to get legal advice.

Some info may be found here.

Otherwise, like Ser says, you are probably not going to get legal advice on a forum, or at least any of quality. If you look around however, you should find various outlines of how to go about what you want.
