How would I go about determining what print version of the PH and M&T I have? They are the hard back versions but I didn't see anywhere that noted what printing they were. Thanks!

Look at the spine of the C&C PHB that you have.
TLG 8010 = 1st print (hardcover only)
TLG 80102 = 2nd print (hardcover only)
TLG 80103 = 3rd printing (hardcover only)
TLG 80104-P = Special GenCon printing (4th print, color plates)
TLG 80104 = 4th printing (in both soft cover and hard cover, both same #)
C&C FlipBook has no product number
The M&T follows the same progression.
TLG 8011 = 1st print (hardcover only)
TLG 80112 = 2nd print (hardcover only)
TLG 80113 = 3rd print (both hardcover and softcover)

What about the collector's books with the special covers? What printings are those?

The Leatherette edition of the PHB is kind of like printing 2.5. It has some minor changes in it, but it is definitely not up to the 3rd printing standards. The leatherette version of the M&T is the same way, but it is inbetween the 1st and 2nd printings, essentially making it printing 1.5. There are some significant changes from the 1st printing to the M&T leatherette version, particularly in the vampire spawn, otherwise it's just normal errata.
The uber "collector's edition" of these books (called the Personalized Edition back in 2005) was the 2nd printing for the PHB and the 1st printing for the M&T.

The Leatherette editions are not up to the 3rd printing standards?
What is different for the Player's book? Is there errata for it or is it just layout and formatting? (like 1st to 2nd print)

Omote got everything you need. You just need to look upon the details in determining the print version. I actually didn't recognize mine before, but later I have found it!

2nd printing is still the best.

Is there more than one version of the GM Screen? If so, is there a way to tell the difference?

There is more then one version of the CK Screen.
The newest version (2nd version) of the CK Screen updates the Class Abilities information (particularly the Barbarian), plus some general errata were fixed (typos).
The original has slightly lighter shading, and the quad-screen is folded like an accordian if you will. The center fold folds in towards the CK, while the newer version folds more like a traditional quad screen.
