My most memorable Encounters were with a Terrasque, Death Knight, and a Grey Slaadi. Liches are up there too.

Hmmmmm good question
It might sound cheesy, but the monster that the GM has tied the campaign arch around.
If the GM is a good one and spent the time to make the campaign a good one, then he will have a monster set up to perfectly fit the party and have enough tricks to make it interesting.

I've had a paladin or 2 that have went toe to toe with a Death knight ... I think I've fought one to a draw and well the other one didn't go so well ...
My most memorable, A Kostchtchie in a mountain pass fighting a delay action so the party could escape - come to think of it that happens a lot with my paladins ... I may need to rethink my game plan ...
This may be low brow, but another was a ranger going up against a tribe of Gnolls. The DM played the great. smart pack mentality, vicious. 3 or 4 good skirmishes, then a great final running battle to clear out the pack's camp.

Neither in C&C, officially. But, officialness and playability are very different things... especially seeing as I created them, or, rather, wrote them up.

Dragon, easily. If fighting a dragon isn't a crazy, exhilarating battle, than someone is doing something wrong.

You know, ... it just dawned on me that in all of these years of gaming (well years of off and on gaming) I've never faced one of them.
That said, this statement isn't an invitation for tree or rigon to throw one into their game just to watch the look of horror as my character falls to one of the many eye stalk attacks ...

Gnolls, flinds, black orcs, tsathar, and the like, which are not stupid and charge headlong into combat with deadly abandon. I'd like to see these, as some of my favorite humanoids be smart and challenging in combat without resorting to countless waves of suicidal attacks to up the danger level. These creatures might be the bad guys of typical fantasy gaming adventures, but I am sick to death of them being mindless and ultra violent. These creatures should have motivations of their own, and reasons to want to stay alive and kill adventurers before they kill them!

10 Ogres against a group of 13 1st lvl PCs... all but one perished.... I'd like a replay on my first day of gaming please, set the way back machine for 1979!

FWIW,
Many Gates of the Gann has a strong band of flinds and gnolls for the party to tackle.
