I have purchased some time ago the CK screen. On it there is a little chart with Range and modifiers. I cannot find that anywhere in the PHB. The smartest thing I have in my mind is that the range that appears in the ranged weapons list of the PHB are used like Increments range. So a bow short shoots arrow between 0 and 60' with no penalty, between 61' and (I think) 120' with -2, and finally between 121' and 180' with -6. A short bow cannot shoot farer than 180'.
Am I right?

PHB, 3rd Printing, page 117, Combat Actions/Ranged Combat. Range listed on Equipment list is short range. Medium range is double short range, -2 to hit; Long range is triple short range, -6 to hit.
So yes, in your example, a short bow has a range increment of 60 feet. From 61-120 feet, it is -2 to hit. From 121-180 feet it is -6 to hit. You cannot shoot it farther than 180 feet.

It seems rather ridiculous that an arrow could not fly further than 180 feet... so I tend to allow "extreme" range at -10. Short bows go to 250, long to 500.

Of course they do. However, hitting a man sized target that is aware of you (and can move in response) beyond the range listed is basically, near impossible. Stationary, not a big problem though.

Exactly, which is why I allow the shot, at severe penalty. Although, it may not be severe enough. I used to have damage reduced over range as well, so even if you hit a foe at 500 feet, you'd only do about 1 damage but opted to eliminate that for that particular game.
Also, when doing volley attacks, I tend to treat them like breath weapons, split in percentages across available targets.

-10 seems good. Remember a "0-level" type is the typical archer.
I like the volley method you have. % chance is a good way as that is basically what massed archery & musket combat was like. Nothing but shoot at that mass of soldiers and both sides take their chances of hitting and being hit.
