Rules No One Uses
Obviously this is subjective; no one knows what rules everyone else use, but if you've played with a few people and read these forums you can make a guess.
For instance, does anyone use number of foes per round by shield type? It's a good idea, it's just hard to track without the player's help.
Encumbrance is one that lots of people have rules for but only occasionally enforce.
If you were going to remove all of the rules you never use (assuming you usually make some effort to use most of the rules), what else would go?

Another couple would maybe be:
Dodge/Evade: These are useful, but most players don't avail themselves of them, because almost anything else would usually be a better tactical decision for the group.
Disengaging: Very traditional, and a good way to keep people from just running into and out of melee with impunity, but I think most CKs probably have gone to a simpler attack of opportunity model.

I just guesstimate on encumbrance. I use the shield rules. I never understood the need for a special disengage rule. A person wants to back out of combat, cool. It has zero bearing on whether or not a foe can follow. C&C is so rules lite I can't think of any other major rule I don't use...

Encumbrance... Just not interested in getting that fiddly. I'll ding you if you have way to much and then come across a horde.

Encumbrance, listening, searching.... saves. Whatever is cumbersome.

Spell components. I've never used them since 1980 when I was first introduced to D&D.

I try to use the # of opponents per shield rule. Not sure how good I am at tracking that, but probably not very. I don't bother with spell components unless it is something particularly expensive. Definitely don't bother with encumbrance. And I don't use the SIEGE engine for surprise or secret door checks. I just roll a d6 and move on.

Yeah, encumbrance as well. And yet, I absolutely hate bags of holding.

I use the material component for spells very strictly (when I think about it). If it is an expansive component I always check. But, I am liberal on spell effects/range/damage so it evens out. The encumbrance rules get glossed over unless they are dragging a big bunch of loot. I use the shield rules but I know I miss that at times.
