Looking under the description, and looking at the monster description, should one assume that the djinni will only fight for the summoner, grant wishes to the summoner as well, or grant wishes if released from being summoned again, etc.?

The djinn will serve faithfully for the maximum amount of time the ring allows, which is one hour per day even if summoned multiple times in the same day. If the djinn dies, the ring becomes worthless, so its usually a bad idea to do this unless you delight in the destruction of djinni and/or magic items.

The djinn serves the ring-bearer only and can be commanded by others if the summoner echoes the instruction, but the caller would have to perform the wish for the other person. The djinn can grant one wish per day, but faithfulness to the summoner does not guarantee the wish will be exactly as desired (djinn will try to warp the wish if the wisher is evil, as per their description). Also, wishes are not "all-powerful" so a Castle Keeper is in full rights to limit this however they decide... so, be careful what you wish for. Also, a djinn is benevolent -- it will not like being commanded to grant wishes ever day, so in time, it will start to treat the caller as something other than a friend (it is also not a good act to abuse a creature in this way.) Lastly, djinni are chaotic good - they are not lawful, so they can be more flexible in most circumstances.

If it hasn't used it already for the day, it might, but there is no guarantee a released djinn would want to bestow a wish.
So, basically, if you're looking to turn a ring of djinn calling into a ring of infinite wishes, you're mistaken, unless you're very careful in how its used and do not abuse it.
