Here's my list so far:

Fantasy: obviously C&C for me!

Sci-fi: TSR's Alternity hands down

Modern: Undecided, possibly White Wolf's World of Darkness

Horror: Undecided, possibly White Wolf's World of Darkness

Supers: Undecided, but so far it's Mutants & Masterminds

Post-apocalyptic: Alternity

Fantasy - Original D&D: nothing beats the best, most defining game of the genre.

Sci-Fi (soft) - Tales from the Floating Vagabond: it's like Toon in space!

Sci-Fi (hard) - SpaceMaster: like all Rolemaster clones, there are rules for everything, and charts for the charts.

Modern - Beyond the Supernatural (1st edition): not too beyond, but enough that the game can actually feel like an episode of X-Files; and yes, this is a horror game, but it much better as "modern."

Horror - Call of Cthulhu 1st edition: some systems are just meshed with their subject matter so perfectly that one cannot tell the difference between the two.

Supers - HERO System (later Champions): you can build any character and do anything... plus, its damn right fun to have duels!

Post-Apocalypse - Gamma World 1st edition: not much better than freewheeling wackiness run amok.

Post-Modern (Cyberpunk) - Shadowrun 2nd edition: the mechanics are pristine and the setting is involving, but not controlling.

Multigenre - Torg: has a little bit of everything and an interesting repeating die mechanic; also, it has the drama deck.

Comedy - Toon (or Paranoia - tied for 1st): just fun, fun, fun, with no restraints or conditions.

Espionage - James Bond 007: simple setup with some amazing supplements like Q Manual

Steampunk - Castle Falkenstein: intriguing concepts in a world that is believable, with some outrageousness that keeps it weird

Fantasy: C&C

Oriental Fantasy: L5R

Sci FI: Traveller. It does everything, without being beholden to novels or movies.

Future Punk: I love Shadowrun.

Western: Go for Your Gun, at least when ran by Aramis and played with Jaybird, Spakman, and my two oldest kids.

Post Apocalyptic: Probably Twilight 2000, even though Gamma World is showing some promise. I'd like to find one for the Horseclan series.

Horror: Haven't found one, but Cthulhu would probably win if I ever get to play it. Anyone want to run it for our Thursday online group? Until I find something better Ravenloft wins.

Supers: Mutants and Masterminds

Modern: True 20

King Arthur/Pendragon: True 20

Fantasy: AD&D 1st Edition.

Honorable mention:

Mentzer D&D (or Rules Cyclopedia)

C&C

Ars Magica

Warhammer FRP

Sci-Fi: Star Frontiers.

Honorable Mention:

West End Games Star Wars d6 is a close second.

Superheroes: Heroes Unlimited.

Horror: Call of Cthulhu (non-D20).

Honorable Mention:

I also like Beyond the Supernatural, but only as an addition to Heroes Unlimited.

Espionage: James Bond 007. I never played Top Secret so I'm uninformed as to its pros and cons.

Modern: Believe it or not, D20 Modern. It's well designed for its purpose. However, most "modern" games fall into one of the other genres. It's modern fantasy, sci-fi, espionage, heroes, or something else. this makes D20 modern redundant for anything except a modern fantasy/sci-fi blend. Other games handle the rest better.

Fantasy: C&C (classic old school fantasy with the best system mechanic I've ever seen)

Sci-Fi: Traveller (incredible wealth of background material; easy to play)

Modern: GURPS (you can make any character you can conceive - even yourself)

Horror: Call of Cthulhu (my favourite horror setting of all time, outstanding product quality)

Supers: Hero System (if you can imagine it you can build it - allows you to tinker with your powers and build them exactly as you want them)

Post-Apocolyptic: The Morrow Project (because I played it in highschool and I'm feeling nostalgic)

Fantasy: C&C or Palladium FRPG 1st Ed Revised

Sci-fi: Star Wars D6 by WEG although Robotech was fun.

Modern: GURPS or HERO

Horror: Call of Cthulhu

Supers: DC Heroes although Heroes Unlimited and Champions are good for lower powered games. Had M&M but got rid of it - I found the layout and rules to be too obtuse

Post-apocalyptic: I only know Rifts.

These are my choices for each genre (with a different system for every type of game I like to play in that genre)...

Fantasy: Castles & Crusades, Burning Wheel and Hackmaster (high fantasy, low fantasy and gritty fantasy, respectively).

Sci-Fi: Heavy Gear 2nd Edition (Mecha/military), Dark Heresy (horror)

Modern: Silhouette CORE 3.0 (gritty), Trail of Cthulhu (horror)

Eastern Fantasy: Legend of the Five Rings 3rd Edition (high fantasy), The Blossoms are Falling (low fantasy)
